Simple dinners are the way to go on busy weeks. So when I thought about a new dish I could make my family this is what I came up with. It is really easy and will serve 4 people easily. I hope you and your family enjoy this simple dish. After trying and eating my husband said that next time we should add veggies to make it a “healthier” meal. So we had leftovers and he added zucchini and carrots. The taste with the veggies in the soup was amazing, I bet if you had a picky kid they would still eat with the zucchini in it since it was hard to tell it was a veggie.
What you need
1 lb of cheese tortellini’s, frozen or fresh
1 lb of ground beef
1/4 cup of diced onion
1 can of stewed tomatoes
1 can of tomato sauce
2 tsp of garlic
24 oz of chicken broth
salt and pepper
If you want veggies add in some zucchini and/or carrots)
and cilantro if you want to garnish it
How to make
First, the thing you do is cook up your ground beef, garlic, and onion in the Instant Pot on simmer mode. Once the beef is cooked you will add your broth and in the pot with your tortellini’s. Close your Instant Pot lid in and close the valve and cook on manual mode for 5 minutes. Once the timer goes off you can open the valve and naturally release the pressure. Now you can serve with some garlic bread or alone.
