Cabbage Rolls in the Instant Pot

So simple in my house is a great dinner but my family does like something different from time to time.  So tonight I worked hard on a different recipe for them.  This recipe included my Instant Pot but if you don’t have one you can make you just need to steam the cabbage rolls for 12-15 minutes instead on your stove top.

The KEY to making it an easy meal is that I cooked the ground beef the night before so I didn’t have to worry about today. This should make enough for a family of 4 to eat. 

Ingredients 

1 head of cabbage
1 cup rice
1/4 diced onion (cook with ground beef)
1 lb ground beef
Can of diced tomatoes
Italian Seasoning (optional I add to my meat)

How to make

I will first pressure cook my rice in my Instant Pot for 8 minutes 
I use two cup water for one cup of rice.
While the rice is cooking I blanch my cabbage leaves.  The best way to do is cut the bottom off and then gently peel the leaves off and then place in boiling water for 90-120 seconds.  I place mine in a strainer to help drain and they aren’t sitting in water.  By the time that is done the rice will be done.
The rice will still look a little undercooked but that is fine.  
You will mix it up with your ground beef and rice together.  
Once mixed up well you will scoop the mix into the blanched cabbage leaves 
and do the fold in side then roll up like a burrito.  
Next place the rolls on a steam rack and add 1 cup water to the bottom of your pot.
Now place your Instant Pot on steam for 5 minutes.  
While that is steaming them up to finish cooking them you will warm up the can of diced tomatoes up on your stove. 

Now once all is done you will simply let steam go and then place tomatoes over top.  If you want you can add a little parsley too for a garnish.
