So my favorite meal in the world is homemade gumbo. It is the perfect food for a cold day and also perfect just for comfort food. Plus this is my husband’s favorite meal so I make monthly from November till March. This will make enough for 4-6 people.
Cajun Gumbo in Instant Pot
1lb Chicken Breast (I get rotisserie)
1lb Smoked Sausage
1lb Shrimp, raw, with no shell or tail
1/2- 1 jar of Roux (they sell at the store or recipe is below)
2 cups Onion, diced
1 large Green pepper, diced
3 pieces of celery died up
1 (12oz) bag of okra frozen
2 cloves of garlic
3 tsp of Tony Chachere seasoning (more if you want more flavor)
pinch of thyme
salt and pepper to your liking
3 cups of chicken broth
1 cup of rice
How to make
You will add all your ingredients but the shrimp and okra.
Plus in another pot that fits in the IP pot on top and add in 2 cups of water and 1 cup of rice.
Close the lid on your Instant Pot and turn on rice mode which is 15 minutes.
Once done you will open the valve and do a quick release.
Take the rice out that should be cooked perfectly.
Turn the Instant Pot back on to simmer and add in your okra and shrimp.
Let cook for 7-10 more minutes or till the shrimp’s turn pink to your liking.
How to make your own Roux (you need to make first if you make your own homemade)
You can make your own homemade Roux today and here is how. Get 1/8 cup oil and 1/4 cup flour. You will turn your Instant Pot on simmer and you will mix up the mixture up continually. You will mix up till the flour is brown and smells burned. The farmed out is the more flavor you get. Normally it takes me about 20 minutes to get the color I want. Remember you want brown not light brown. If your powered mixture seems very dry you can add a slash more of oil of you need.
