Chicken Black Bean Bowl

My favorite part of my Instant Pot is that I can cook via pot in pot.  It is perfect so I can make my favorite food separate or together.  For this meal, you can cook together or via pot in pot.  I decided to do the chicken on the bottom then the rice, tomato, and beans together.  You can top with cheese and/or avocado.  I hope you try this recipe and you love it as much as my family.

What you need to feed 4 people

1.5 lbs of chicken boneless thighs (semi frozen)
1 can of black beans cooked
1 cup of rice ( I used the box that is above)
2 cups of water
1 can of rotel or diced tomato (if you don’t want a lot of spice)
1 cup of water or broth for bottom of pot

How to make

Here is the way that I made my chicken bowl.  First, I got my chicken and seasoned it up.  Next, I placed on the bottom of my Instant Pot.  Plus I added the in the 1 cup of water or broth.  After that, I placed my trivet on top of the chicken.  Then I placed my pyrex glass on top of that.  Then I added the can of Rotel, black beans, rice, and water together then simply mix up.  Next, I closed the did and cooked on rice mode for 12 minutes.  Once the pressure cooker beeped I let the pressure naturally released for 10 minutes.  After the 10 minutes, I will open up the valve and let the rest of the pressure out.  Then I take out the Pyrex dish with the trivet.  Lastly, I sit down and enjoy the amazing meal that I just made and only took me 30 minutes to make.
