So my husband and I are trying to cut our calorie count down in the evening. Since we don’t do much after he goes off work. So we decided to try out a roast my friend has told me about a few times. It is called Mississippi Roast and it sounds great. Then when I got the recipe I noticed it called for a 1/2 cup of butter and I was not about to serve that much up to us. So I did some digging and I figured out the best way to go around it and make a Healthy Roast. I would use 1/4 stick plus some beef broth. I decided to try it and since it was SO AMAZING I am sharing with you how to make.

1 3-4 lb chuck roast (you don’t want too much fat)
1 packet of ranch seasoning mix
1/2 stick of butter
1/2 jar of Peppercinis with the juice
1 cup of beef broth
(garlic if you love like me)
How to make:
First, you season your meat up with garlic and the 1/2 the ranch package. (I seasoned for 20 minutes)
Then you will place your beef broth into the pressure cooker.
Next place your roast in the pot then
add the rest of the ranch package on to the roast.
A, so place your butter on top.
Close the lid and place on manual for 22 minutes per lb of roast you have.
Once the timer goes off let the pressure naturally release for 10-15 minutes.
Once that time is up you will open the valve and let out the remaining pressure.
Last open the lid and you will find the MOST tender roast you have ever had.
I was able to tear apart with my fork alone.
You can serve this alone with some fresh veggies or you can make into a fresh sandwich. Either way tastes amazing for sure.
If you don’t have a pressure cooker, that is fine. You will use the same stuff but cook yours in your crock pot for 8 hours on low. It will still be tender it just takers longer and taste as good. Good luck and hope you enjoy as much as my family.
