I hate to cook one thing on my stove and one thing in my oven. So I decided to try something scary and it actually worked out. I was so scared but once I did I noticed I was silly for being scared. I have done a few PIP (pot in pot) recipes before. So here is my recipe for my “Buck Family Meatloaf”.
Instant Pot Meatloaf and Potatoes via Pot in Pot

What you Need
1.5 lbs of lean ground beef
2lbs of potatoes
3tsp of oats
a few pinches of carrots
1/4 cup of bread crumbs
ketchup if you want for the top
salt and pepper
mini loaf pans or disposable ones
How to Make
First, you need to mix up your meatloaf stuff in a bowl. Which includes everything but the potatoes. Once cooked up well, spray your pans with some cooking spray. Place your mixture in each pan till full. Now wash up your potatoes and use a fork and poke holes in them. Use your trivet that came with your Instant Pot and place your potatoes on it. Add in 1 1/2 cup of water to the bottom of the Instant Pot. Place your meatloaf pans on top of the potatoes, close lid and turn on your Instant Pot for 24 minutes. Once the timer goes off you will open up the valve and release the pressure. Once you can open use gloves grab out the mini pans first then your potatoes. Check to see if your potatoes are soft, if they are still hard you can place back in and cook again for 5 minutes.
