I hate to cook one thing on my stove and one thing in my oven. So I decided to try something scary and it actually worked out with this combination Instant Pot Meatloaf and pot in pot potato dish! I was so scared but once I did I noticed I was silly for being scared. I have done a few PIP (pot in pot) recipes before. So here is my recipe for my “Buck Family Meatloaf”.
Instant Pot Meatloaf and Potatoes via Pot in Pot

1.5 lbs of lean ground beef
3 tsp quick oats
1 carrot, shredded
1/4 cup breadcrumbs (Italian style add extra flavor)
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon garlic powder
2lbs of potatoes, cut into 1″ cubes or chunks
Ketchup or BBQ sauce for the top of meatloaf if desired
In a medium bowl, mix together the ground beef, egg, breadcrumbs, shredded carrots, quick oats, garlic powder, black pepper and salt until well combined.
Spray small loaf pans or dish that is oven safe and fits into the Instant Pot on top of the trivet with non-stick spray.
Place the meatloaf mixture into the pan/bowl/dish that you have chosen and set aside. Top with ketchup or barbecue sauce as desired.
Place a trivet into the Instant Pot Liner.
Place your potatoes (already cut into chunks), on top of the trivet in your Instant Pot Liner. Add 1 1/2 cup water to the bottom of the Instant Pot.
Place your meatloaf pans or dish on top of the potatoes and set the lid to seal.
Set your Instant Pot to High Pressure or Meat Setting for 24 minutes.
Once cooking cycle has completed, you will do a manual quick pressure release.
Using tongs or silicone oven mitts, remove the meatloaf pan/dish from the Instant Pot.
Check potatoes for tenderness. If they are not completely cooked, you may restart the Instant Pot on the same setting for an additional 5 minutes. If they are cooked, remove and season as desired with salt and pepper.
