This Instant Pot Shredded Beef is so versatile. It’s a great way to batch cook beef to use for tons of recipes. You can use for enchiladas, nachos, sandwiches, tacos, taquitos and other recipes. It’s just a great flavorful way of cooking a chuck roast to use throughout the week for other recipes.
Instant Pot Shredded Beef
One of my favorite things about shredded beef is that it is a great way to use a tougher cut of meat. I prefer a rump roast or chuck roast, but you can use stew meats or any beef roast for this recipe. The tougher cuts usually require longer cook times, but the Instant Pot really cuts back on that.
Ingredients for Instant Pot Shredded Beef
3-4 lb of beef rump roast or chuck roast
2 tbsp of coconut oil
2 tsp of garlic
1/2 cup of onion
2.5 cups of beef broth
salt and pepper
(I added chili powder to mine for I could make beef enchiladas)
Directions for Instant Pot Shredded Beef
Cut your roast up into 4 large pieces.
Turn your Instant Pot onto saute mode and add in your coconut oil.
Place the meat into the Instant pot and brown on each side. This will take about 10 minutes.
Once you are done browning the meat, turn off saute mode.
Add in the beef broth, and scrape the bottom of the Instant Pot the best that you can to loosen up any bits of flavor.
Add the garlic, onion, salt, and pepper, then set your Instant Pot lid to seal.
Cook on manual pressure cooker mode for 55 minutes.
Once the timer goes off, turn off keep warm mode and let the pressure release naturally for 10 minutes.
If you still have pressure after you you can open the valve and release the remaining.
Once you open your lid you should be able to shreed your beef with two forks.
