Hearty meals are a way to my husband’s stomach as he tells me quite often. So when I make one he gets excited since I try and keep our calorie count down with our new diet. The only thing is that my sister is in Cross Country so she must have carbs still so on Friday before her meet I will make something for her.

1 lb of ground beef
2 lbs of yukon potatoes (taste better)
1/2 cup of onion
1 tablespoon of olive oil
1 can of diced tomatoes
1 jalapeno diced up (if you want)
salt and pepper
How to make
First you will place the oil on the bottom of your pressure cooker
then add your ground beef, onion salt and pepper
you will brown the meat 75% of the way so if you see a little pink that is fine
Now you will add your jalapeno, diced tomato and diced potato to the instant pot.
Last you will close your Instant Pot on and let cook under high pressure for 7 minutes.
