Cajun food is like my soul food and so is Shrimp with Grits in my house. I can eat it and feel so much better afterward. My husband laughs about it all the time. Mainly because I am adopted and I don’t know my family history. So he says “you must be part Cajun”. So after fiddling with this recipe for a few weeks, I have finally perfected this recipe enough to share with you. So I hope you like our take of Instant Pot Shrimp with Grits. What you need to feed 3-4 people
1 lb of shrimp
1/4 lb of bacon (diced)
1 cup of cheese
3 tsp of garlic
6 tsp of Cajun seasoning
4 tsp of butter
1/3 cup of diced onion
Grits (Instant Grits)
Salt & Pepper
plus green onion to garnish
How to make
Now first you will make the grits.
I followed the directions on the box for the water, cheese, and grits.
Then I found a bowl that would fit in my pressure cooker and then I made the grits.
With the measurements that the instant grits gave me.
Next turned on my pressure cooker on manual and cooked for 4 minutes.
While the grits are cooking I work on prepping the rest of the items.
First I season up the shrimp with my 3tsp of Cajun seasoning in a baggie.
Once the seasoning is in the bagging I will mix it up well till the shrimp is well seasoned.
Next, I will 4 tsp of butter and the last 3 tsp of Cajun seasoning in a bagging and mix up very well.
Will look similar to mine in the picture above.
By now your pressure cooker will have beeped and you will open up
and do a quick release of the pressure.
Once all the pressure is released you will remove the pot with the grits.
You will notice the grits have some excess water that is fine you will just mix up well and the
grits, water, and cheese will come together well.
Now turn on your pressure cooker on saute mode.
Place in your bacon and cook it till it is cooked well.
Once the bacon is done you will add in your shrimp and garlic and cook till they are done (pink).
Now place your grits in a bowl and in the middle add in your seasoned butter.
You will notice it melting and leaving the pretty design like mine.
If you feel it still needs more butter, you can do more seasoning butter.
Now you simply place the shrimp In the middle on top of the butter. Next, you will place the green onion garnish in the bowl. It gives it a great taste at the end when you are eating your Pot Shrimp with Grits.
